It's still very cool here in the morning (sometimes in the 30's). How does one mask off part of the radiator if it's running cooler than I want it to?

I have a fat Koyo.

as i just picked up my SM, i will speak from the aspect of an IT driver... you have a couple of options:
1) tape over the inlet in overlapping strips so that you can peel them off as needed
2) tape or zip tie a piece of cardboard against the radiator

my ITB CRX was impossible to keep temp in it, and i used the tape method.

I had a similar problem last November at Summit.

You should have a piece of screening in front of the radiator to protect it from rocks and debris. This also makes a convenient place to add duct tape as required. I had no problems with it staying in place all day.

Just put a thermostat back in the car and you will have no problem! I now leave mine in even in the dead of summer down here in Florida.

So... if your car starts running hot in the middle of a race do you pull over and peel off some tape?

Sean sells a 160 degree thermo.

Some folks just slide a piece of cardboard down in front of the rad to cover 30-40%.

I use the former.

Since our grille opening has mesh in it, we just put some tape in there, probably covering 25% of the opening. Works well for us, then again we run a worn out 1.8 with a thinner radiator.
