When upgrading to a pro head, do most engine builders swap an existing head for an already prepped head? Or do they take my head and do the work on it?

Unless you buy a "complete" head from a builder, I would think it will be your head you get back. After all, if you had "good" flowing head, you wouldn't want to give it up would you? And of course, a builder wouldn't want a crappy flowing head either in exhange.

Not all heads are the same, even after being rebuilt (by pros). Sort of like athletes, some (heads) just have more talent at birth.

Meathead just sent me a good, reworked used head. Then I sold my unused crate head.

We do both, if the customers head is a good one we use it if not we use another one.
Like James said not all heads are the same.
It's all about the flow.
